Salmon with Chimichurri

Chimichurri:
(Chuck)
2 cloves garlic
1 shallot
1 very small onion
1 bunch parsley
1/4 cup cilantro
1 Tbs red wine vinegar
1/2 cup olive oil
1 lemon, zest and juice
crushed red pepper
salt and pepper

Process garlic, onion, shallot.  Add parsley and cilantro and pulse a few times to chop, not puree.  Toss the herbs with remaining ingredients.

Grill salmon on cedar plank with some of the chimichurri spread on top.
