Spinach Ravioli with Balsamic Sausage Sauce




For the pasta dough:

For the filling:
Spinach
Ricotta cheese
Mascarpone cheese
Shallots, chopped

For the sauce:
Onion
Garlic
Sausage ( )
Balsamic vinegar
Shitake mushrooms

Sautee onions and garlic in olive oil until translucent.  Add sausage and mushrooms.
